Sweet corn, also called sugar corn and pole corn is a hybridized variety of maize with high sugar content. Sweet corn is the result of a naturally occurring recessive mutation in the genes which control the conversion of sugar to starch inside the endosperm of the corn kernel. Sweet corn can be boiled, barbequed, made into soup and tossed into salads. It is a good source of vitamin C, thiamine, niacin, and dietary fiber.
